Role Overview
As Sous Chef, you will play a key leadership role within the kitchen, supporting the Head Chef in delivering a high-quality culinary experience across the hotel’s restaurant, bar, functions, and events. You will help develop menus, ensure high food standards, supervise junior chefs, and maintain smooth kitchen operations on a daily basis.
Key Responsibilities
Kitchen Leadership & Operations
*Support the Head Chef in the daily running of the kitchen and lead the brigade in their absence.
*Oversee food preparation, cooking, and presentation to consistently high standards.
*Ensure all dishes leaving the kitchen meet brand, quality, and hygiene expectations.
Menu Development & Creativity
*Contribute to menu planning, seasonal updates, and new dish creation.
*Bring fresh ideas using local produce and current food trends.
Team Supervision & Training
*Mentor and train junior chefs, fostering a positive and efficient team environment.
*Assist with scheduling, task delegation, and performance management.
Food Safety & Compliance
*Maintain strict compliance with food hygiene, allergen management, and kitchen safety regulations.
*Ensure correct storage, stock rotation, and waste management procedures are followed.
Stock & Cost Control
*Assist with stock ordering, inventory checks, and controlling food costs.
*Work closely with the Head Chef to manage suppliers and ensure consistent quality.
Skills & Experience Required
*Previous experience as a Sous Chef or strong Junior Sous Chef in a hotel, restaurant, or high-volume kitchen.
*Strong culinary skills with a passion for fresh, locally sourced ingredients.
*Ability to remain calm under pressure and lead a kitchen team effectively.
*Good understanding of health & safety, HACCP, and food hygiene legislation.
*Strong organisational skills with excellent attention to detail.
*A positive, hands-on approach with a commitment to delivering great guest experiences.
